Kaiseki cuisine using both Okinawan ingredients and tableware
Okinawa Soba Kaiseki Toutoganashi is a restaurant specializing in traditional kaiseki cuisine. Diners can enjoy their meals inside a refurbished old Japanese house that was first built 65 years ago. The restaurant offers a daily menu made using generous helpings of Okinawan-produced ingredients purchased fresh from the local market each morning. It also serves Okinawan soba with homemade noodles, made from locally produced flour using a proprietary recipe. The choice of tableware is also particularly Okinawan, including Ryukyuan pottery (yachimun) , glass and lacquerware.
